Ponzu

Ponzu is a rice vinegar and yuzu (citron) dressing. If you can’t find yuzu, you can replace it with lemon. The flavour won’t be the same, but it’s better than nothing!

Add ponzu to yu-dofu (boiled tofu in dashi) or as a dressing for grilled fish or vegetables.

Ingredients

3 tbsp komezu (rice vinegar)
2 1/2 tbsp mirin
2 tbsp yuzu or lemon juice
5 tbsp soy sauce
6 tbsp niban or ichiban dashi (you can find the recipe on this site)

Method

Combine all the ingredients in a saucepan and boil over medium. Cool and serve.
