Oyako Don is rice topped with egg, onion, and chicken. Oyako translates into the words parent and child, which refer to the chicken and the egg.
Ingredients
1/2 cup soy sauce
2 tbsp mirin
1 cup niban dashi
3 onions, finely sliced
2 chicken legs that have been boned, skinned and cubed
3-4 eggs, lightly beaten
Method
In a large pan, fry the onions in some oil until golden. For the oil, you can use vegetable or lard. Add the soy sauce, mirin, and dashi and cook for about 5 minutes. then add the chicken and stew until the chicken is fully cooked. It should take about 30 minutes or so on medium. Stir occasionally so the bottom doesn’t get burnt.
Pour the eggs on top, and cover with a lid. let cook for about 3-5 minutes, until the eggs are slightly firm but still a little runny. If you’re worried about harmful bacteria, you can cook the eggs completely.
cut into portions in the pan and serve on a bed of rice. You can garnish with some shreds of nori.
