Tamago-jiru is a simple clear soup with gently cooked egg and threads of carrot. It is great as an accompaniment to breakfast. Tamago means egg, and shiru or jiru means soup
Ingredients
2 eggs, lightly beaten
2 tsp salt
2 1/2 cup ichiban dashi
2 tsp soy sauce
1 small carrot, finely julienned and steamed
Method
Boil 1 quart of water over high heat and slowly pour the egg into the water. As soon as the egg floats to the surface, strain it through a cheese cloth. At this point, you can leave it as is or make a pretty cake by molding the egg in the cheese cloth. Simply squeeze the ends of the cheesecloth together to form a rectangle. Rest for 30 minutes and cool.
After it has been chilled, slice the cake. Then, add it to the soup made from dashi, salt and shoyu, with the carrot.
As a garnish, you can add some finely sliced green onion, or a slice of carrot cut into a flower.
