How To Prepare Chirashi Zushi

Chirashi Zushi is a layer on sushi rice onto which assorted sliced seafood, tamagoyaki, and vegetables are placed.


Chirashi Zushi is a layer on sushi rice onto which assorted sliced seafood, tamagoyaki, and vegetables are placed.

Simply spread a bed of rice onto a pretty lacquered wood box, and scatter shreds of nori onto the rice.

Then, lay the assorted toppings prettily on top. This can include a slice of tamagoyaki, kamaboko (fish cake), maguro (tuna), salmon, gizzard shad, ark shell, squid and finely sliced cucumber and stewed shiitake, with the stems removed.

There really is no method when placing the toppings on the bed of rice, but a beautiful appearance is essential.

You can also include gari and wasabi, but as the last topping.

Finally, sprinkle a few more strips of nori onto the toppings, and serve immediately!
