Sake Steamed Clams

Clams steamed in sake are a warming dish for a winter’s day.

Ingredients

1/2 cup sake
1/2 finely sliced green onion, seperating the white from the green part
1 tbsp dried chile pepper flakes
11 clams, asari or cockles, desanded by submerging them in a bowl of cold water for 30 minutes to let the sand come out
1 crusty baguette for dipping

Method

Boil the sake, white part of the green onion and red chile flakes. Then simmer on low for 3 minutes. Add the clams and stir until they open.

Place the clams in a serving dish and pour the broth over it, sprinkling some of the green part of the green onion on top. You can also add two slices of finely sliced lemon as a garnish. Enjoy with sliced crusty bread.
