Tazuna Zushi is a rolled sushi with slices of fish, vegetables and egg wrapped around it. The nori hides underneath the toppings, and in the middle of the rice, lies cucumber and egg. Because of its pretty striped appearance, it is called “candy cane sushi”.
You will need plastic wrap and a bamboo mat (makisu) to make this.
Ingredients
4 cups of prepared sushi rice
1 sheet of tamagoyaki (instead of rolling the tamagoyaki up, simply coat the bottom of the pan with one layer of egg mixture to make this)
3 prepared and cooked prawns
6 slices of prepared gizzard shad, cut into the same length as the prawns
1 long and thin Japanese cucumber, half of it sliced into 2 pieces lengthwise. Cut the other part in half and slice it thinly. These pieces will be placed on the sushi roll, like he prawns and fish.
1/4 sheet nori strip
Method
On the bamboo mat place plastic wrap so the ingredients don’t stick to the mat.
Cut the thin omelette into 4 lengthwise. Set aside the two half moon shaped ends. Cut the two middle rectangular pieces into 6 squares. Then, for the two half moons, slice into 1/2 inch wide strips.
On the plastic wrapped mat, place the fish, square pieces of egg, prawns, and cucumber alternatively for the length of the mat.
Then, place the strip of nori on top.
Add the rice ontop of the nori, for the length of it. It should only cover the toppings and nori, so don’t spread it out on top of the whole mat!
Indent the centre of the rice using your fingers, and put the cucumber sticks in the middle, as well as the remaining omelette.
Roll the mat up tightly, molding the sushi inside.
Let rest for 30 minutes covered in wrap. You can slice it with the wrap still on, as it is easier to do. Remember to remove the plastic before serving, though!
*Note*
If you don’t have gizzard shad, you can replace it with another type of fish. However, to make the sushi roll colourful, you can choose a fish that has a different colour from the prawns.
